To make them a slave you have to make them wear something with the slavery enchantment. I know you can improve relations if they're your child or slave (or both) but I haven't found a way otherwise.

First you have to enchant it to change the persons preference to whichever it is you want, then use it on them like you would any other item, only ever used it once myself after beating someone in a fight.

Did you use the change positions tab? In scenes where there furniture involved(I believe) the other person needs to be the one sitting for you to be dominate.
