just having a rival club gone won't mean club life is going to be a breeze, and dimi could always introduce a new antagonist
which if a remember correctly he already stated, in his outliner for his 2nd chapter/episode
but as i said before depends on how dimi writes it he can take many paths after the

I'm already working on it, I can't go faster, it needs at least 9 months + time until they do more than sleep, eat and cry.

There might other things to fight and not another biker club, like maybe quietly behind the scenes pushing out the corrupt mayor and exposing the greedy business moguls trying to take over the downtown area. Just spitballing it.
