Is there a list on all the growth rates and attack patterns of all the animals and NPCs you can tame?
Whatever animal you happen to like is good enough if you want them, in my opinion. But while I don't have any hard numbers or a proper comprehensive list, I'll say:
Werewolf has a big inventory to carry your shit, moves around reasonably quick, has a flurry attack that deals a lot of damage, grows well with attack.
The giant bull (was it bahumut?) has a
huge inventory and good health pool but just an ok fighter. Losing all HP kind of doesn't matter so fair choice as just a pack-mule.
Native girls take reasonably small amount of space on your party limit with a fair inventory and they're good with a bow, and you can always just behead them when you get tired of them.
Native boys can use bludgeoning weapons to knock things out.
Sand cats take very little space in the party and are cute. Run in with your horde of kittens.
Late in the game you can get the kangaroo to upgrade anyone's inventory size or just tame for its own big inventory as a pack mule.
I just use the mirror shield and one of the AOE weapons to kill everything, the stats of allies matters little to me. Hope you found some of the information helpful though, until you find a more comprehensive answer.
