I haven't played in a while but isn't it 3 steps in the morning, noon, afternoon(evening) and then talk to her at night all in the same day?

for the night part, since it doesn't allow me to talk to her during the night, do I have to talk to her the next night?

No. Hit her with the aphrodisiac in the morning, afternoon and evening. Once you've done that you should be able to upgrade her when you check her during the night
