If the saves are pre-reboot then I'd advise against using them as paths & variables have changed. If they're post-reboot then no problems.

I would not recommend changing any stats.
Some are obviously safe to change, like money etc, but with most other stats, you are probably going to end up braking the game by changing stats.
Having a high relationship with a girl, is not good enough in this game. It keeps track of your other relationships things you have done etc. For instance:

3) Here is the thing, some sluts are actually nice, so you might start to care for them. But it does not change what they are before you met them. Luana (Like Astrid in previous games) is a prime example. She is one of my favourite girls, but she is not a one man girl.

under STATS ingame you can boost your money pro or ass and power stats..no need to change anything else..as the way the game is coded..you'd have to alter the save every action with dames because it goes back to normal for many of the major actions..i've experimented and put Yvette to 100 love 100 good and an action a bit after put things back down to where they should be

How often will i see other people having sex? i don't care about people having sex who are not love interests but don't want to be forced so much to see those scenes.

if it's about my problems with the latest windows update. no problem. That is, I couldn't do anything. The taskbar and the desktop disappeared. The programs I was in time to open continued to work. I simply uninstalled the updates.
As soon as I finish the release I will understand what the problem was, but I am pretty sure it is nothing serious.

Not a lot, and most of it you can avoid. I'm not sure if you can avoid all.
For instance you might put spy cameras in his room... or not. There is a woman in town famous for her sex parties. Unfortunately you Ex GF is her current partner. So you can decide to go... or not. You know what happens at sex parties.
Mostly if you spy on people, you get what you expect.
So to answer your question, yes you might see other people having sex, but mostly avoidable.
