Because unlike Ivy, who has only slept with Lena so far, and Holly, Alison is likely crazy and likely isn't going to take rejection that well. And it's a matter of context.
Cindy has Wade. So what. I'm not chasing her just to break there relationship or sleep with her, like most people. Plus she's average in appeal.
Minerva has Limp Dick Husband. Why would I want to chase after a bitch who treated us like trash just because she was interested in us to satisfy her sexual need? Hard pass.
Emma and past relations. So what? Do her hook ups show up or are mentioned entirely? No, unless you send her off to Jeremy.
Lena and the town is entirely not the town more like a handful of people, which is entirely of the players choice.

Well, we know Ivy has also given Jeremy blowjob or handjob depending on the timeline, and she's now apparently considering going further with him, and asking Ian's input on that. You're also fooling yourself she isn't having sex with other people that we don't get to hear about. And she will set the relationship with Ian to neutral if he doesn't hit on her when she's being flirty with him. So, who here really can't handle rejection well? Not just Alison, evidently.
It's a difference on how we view the fights in ORS. To me it's obvious Eva implemented a fighting mechanic so we could at some point beat up the male competition.
Jeremy is a friendly rival and can have sex with Alison, Lena, Emma, and Louise, probably eventually Ivy as well, and will be beaten up at the martial arts tournament. It's also built up by the fact that as it is now we can't beat him, but can perform better or worse depending on how much time we spent training.
Axel on the other hand is the unfriendly rival, he can have sex with Lena, he has had sex with Cherry, he is constantly hounding Cindy, he mingle quite a bit with Ivy, and Alison and Emma both cream themselves when they see him. It's clear he is also a threat to Ian's sexual exploits. A fight with him is also set up, he gets pissy when he finds out about Ian and Lena dating, gets snarky with Ian at the Cindy photoshoot, and actually tries to push Ian at the club in chapter 10. His fight will clearly be settled outside of the ring and will probably happen after he makes a final attempt for Lenas attention or Ian finds out Axel has been banging Lena while he's dating her.
The idea that these two won't get beat up when the time is right is absurd to me. Both of them are presented as being high walls for Ian to climb, but if he can't climb said walls, why include the martial arts system in the first place?
There's also Mike Gillian's boyfriend that Ian might want to beat up at some point. 
Incidentally, going by the comments in the script, apparently Eva is considering turning the poledancing in Ch.11 (and maybe later in the game, i'd guess -- there's possibility Lena's work at the club goes places) into a minigame.

It's context. When we, the players, first "meet" Allison it's pretty clear SHE likes IAN and wants a relationship with him. Ian isn't pursuing her at all so the pace of the relationship (at least at the start) is kind of on her. The problem I have with Allison (if I'm doing a playthrough where I don't want Ian to be cheated on) is that as soon as Ian doesn't give her attention, she immediately goes and fucks someone else. That isn't love. That's trifflin.
Ivy pretty much openly admits to being a bad bitch sex queen. The appeal to her is that you're "cool" enough to bag her. For people who like Cindy the appeal is similar: she's sexy and demanding, and her boyfriend sucks, so you "win" her over. Emma literally starts as a casual thing that you both promise to keep secret. Lena fucks whoever YOU choose for her to fuck, so whatever happens with her is on the player.
Allison is presented as the girl that got away in HS that has finally admitted she really likes you. I think the hate she gets (which I don't necessarily share) is based on that context, and that you MUST be totally devoted to her path or she IMMEDIATELY starts fucking other people.

About the poledancing, makes sense. Ivy invited Lena to work at the club and corrupted Holly can also be at that scene. Where else to payoff the Lena and Holly pole training. I'm getting impression that what people get upset with Alison over is that, if they don't return Alison's affections they expect her to sit in a corner sobbing all alone until they maybe change their mind after they fuck everyone else available to them. But instead she just shrugs it off and goes to have fun with a guy who actually bothers to hit on her and how dares she.
In other words, that it's fine if they "fuck other people" before Alison, but if it's Alison who fucks some other guy before Ian gets to stick it in? Perish the thought and cue complaints about cheating, cucking and whathaveyou.
Just because Alison has feelings for Ian doesn't mean she's not allowed to have some casual sex when she's single and the guy she has crush on turns her down. It doesn't mean she doesn't love him. Merely that she doesn't obsess over it as much as some people claim she does.

I get what you're saying, and I realize this is a porn game and it's not at all realistic, however I get enjoyment out of these games by trying to make choices I feel I would make in real life given the context of the situation (at least on my first playthrough).
Allison is textbook "If you don't give me what I want I'll find it somewhere else" toxicity, which is far more realistic and common than most of the other tropes in this game. It's interesting to note that you only really see this if you fail (even once) to give her attention. If you cancel all your previous plans and give her the attention she demands, it appears she's really into Ian and they are star-crossed lovers. The minute you do something else, she breaks open her side-dick (your best friend, btw) and you get graced with photos of her tiddy-fucking Jeremy. Like...let's be real here, I know y'all weren't "technically" dating, but there's a certain amount of expectation when you're in a sexual relationship with someone who has confessed they have always had a crush on you. Being denied a date and then fucking that person's best friend less than 24 hours later is absolute ho behavior. I don't hate Allison, but she is definately for the streets. LOL

I.e. that it plays a significant role in that dislike. Otherwise, if it was just about Alison hitting on MC there would be zero reason to bring that aspect up.
A propos of nothing. Since in the next update we can expect the scooby gang to spend time at Perry's beach house, i wonder if Cindy will also be a part of it, or if her modeling contract will keep her busy the entire time. The former could be pretty neat, if there's ongoing affair with Ian.

Yeah, Alison isn't so much sleeping with Jeremy because she wants some casual sex, but because to make Ian jealous.
Its implemented poorly in the game. She already laps into Jeremies arms if Ian decides to stay with Perry and Cherry even just a moment to break the ice. Constantly nagging how she has fun with Jeremy but really would love to have someone else at her side, HINT HINT, NUDGE NUDGE is exhausting. I also dislike that they don't discuss commitment, considering that Ian can spend a weekend with her and dines at her home. And while her chapter 11 seduction is great for cheating routes, its a bad move on her if Ian is already with Lena or Holly (and she knows this and twists it as "let's fuck BEFORE we enter a relationship with someone else").
