All of a sudden I am no longer sure Mike is Gillian's girlfriend: in a discussion with Lena, he tells her she has a full time stable job unlike him. Conversely, Gillian tells Ian she moved back because her boyfriend, not her, found a job there. It might just be an inconsistency but I am not 100% certain any more.

Those two things aren't mutually exclusive: initial move because boyfriend found a new job doesn't mean the girlfriend couldn't find a full-time job of her own during the year that followed.

It would, but there's very little explanation why Jeremy would act extremely shifty and cagey whenever the subject of Mike's girlfriend pops up. I mean, if that gf is a complete stranger to Ian, there's no reason for Jeremy to always go "uh i don't know man, look, why won't we talk about something else".
