Having too many characters mingle is ironically much easier than staying consistent throughout a playthrough so vanilla is kinda the most rewarding route since you can reach levels of intimacy that is beyond sex.
It humanizes the characters and gives them depth.

Exactly, also it helps that both are POV characters (which is refreshing), so you have insight in thought processes, internal monologue, etc. of both of them which (like you said) gives them, and relationship even more depth.
