I very highly doubt we'll get another MMA fight without set up in a prior chapter. Perhaps we can get some more training in with Wen or Yuri, and they'll discuss the upcoming fight. But the actual fight isn't happening in this upcoming release.

I imagine it as just something like Ian stumbling on this randomly, not getting invite from Ivy/Holly -- the point being that they aren't even aware he was there.
As for Ian, it'd be up to the player of course, but it's not like Stan-like guys wouldn't be willing to get their dick anonymously wet. If anything, that's something they could be more willing to try, given shortage of options otherwise.
