V's probably the only character that's inconsistent and done dirty by the writer after every update she's in. As a former V fan, the stuff that we saw about her in this update was just... wow, in a very bad kinda way. I don't know what the point is of all those... jealous lover outbursts of hers or whatever, but unless we're supposed to find out she's a bipolar closet sadomasochist we should be more accepting of, this is not the kinda plot twist that'll make players reconsider their interest in her.
The thing I never understood about her is this exaggerated clinginess toward the MC that makes her insecure asf for no valid reason, IMO. Sure, he's an attractive guy she fell for and who she thinks has a lot of potential to grow as a person, but ffs V, the guy's a walking red flag that would put an entire damn communist ass-kissing party to shame.
She said she always falls for the guys who break her heart, which can mean everything from previous (physically) abusive relationships to casual flings, where she was promised a lot, only to be rostered or just pumped and dumped by the guys she thought she was exclusive with, and still goes for another potential fuckboi.
In MC's case, he's basically a stranger or an acquaintance at best to her and a recently divorced guy with a daughter in a damn coma to boot, so her pushing so hard for exclusivity is simply ridiculous and makes no sense storywise coming from a supposedly smart woman like her.
Guess porn 'logic' is again the answer to our questions, but even so, I completely agree with what you said. V herself is her one and only enemy when it comes to an exclusive relationship with a man she's attracted to. She has no one else except herself to blame for her failures in trying to get commitment from the MC, and I really hope at some point in the game, we'll get an option to call her out on her bullshit. She may consider what she does showing romantic interest in the guy she's attracted to, but almost everyone else considers it textbook

Boundaries are called that for a reason. If she can't respect MC's when she knows well that
her man goes through a very delicate, heart-breaking moment in his life, she disqualifies herself from being worth romancing, no matter how much she might bitch about it throughout the story.
