It's basic economics really. You want food, drink, sex and other pleasurable things. To get them you need servants. After all, even if you wanted to do all the work your self you can hardly plow the fields, feed the animals, tend to the orchards and grape plantations and generally do all that work at once. Especially not with giant dragon hands. That's what serfs are made for.
Now, issue is those serfs have needs too. They need to eat and drink, they need shelter and protection from both bandits and foreigners. And the people providing those needs have needs of their own. So even a small demand like a good roast pig suddenly becomes a giant logistical problem once you add it to all your other demands.
Now, the traditional way to get around this is to pay for the finished goods and just ignore the supply chain making it someone elses problem. But we are a motherfucking dragon. WE ain't giving our loot to nobody. So kingship it is.
