That means it's a fan-made unrated/uncensor patch designed for GOG version. The game itself is officially censored.

it's a bug on Ver. 1.51, allegedly Ver. 1.51b fixed it, but the only link to that update is deleted

I had the same issue, the solution is to start the game with the 32-bit exe (should be called something like SeedOfTheDead_32bit.exe), NOT with the 64-bit exe or the "Launch Seed of the Dead" shortcut. Fixed it for me, anyway.

So I download both 1.51 GOG and the unofficial patch one, I fail to understand here on how to use the patch or is it already patched on 1.51 GOG already so lowkey actually i dont need to download the unofficial patch?

Like other versions, GOG version is censored too. Patch removes censorship.
Install the game, then apply the patch. If it doesn't work, try an alternative version of the patch from my older post

Do you, perhaps, has the 1.51b ubdate? 1.51 crashes after a couple of minutes and for some reason opening the game through the 32 bit launcher both mouse and keyboard stops working

Unfortunately no. I'm not even sure if the GOG release have been updated to the "b" version.

I saw similar random crashes with another UE4 game + Win 10, while everything was fine on Win 7. Someone then said that disconnecting from internet or blocking the game in firewall helped him.

The patch removes censorship, I don't think it fixes any bugs in the game.

patch is for uncesor the game, not to fix the bug, that bug is fixed on 1.5.1b, but the download links are for 1.5.1

Play offline/firewall deactivated, it won't crash that way
