Amy’s events are pseudo-random, so there isn’t a fixed day by which they always finish. I tested the game many times, and honestly, Amy’s storyline usually finished much earlier than day 181. However, the issue you described is definitely possible, and I’ll try to improve this in the next game update.

I ended up finishing it at day 210 after just producing until the mistake happened, sleeping until the next day on repeat. Does doing more shorter productions increase the chances? like is it some chance per production, or is it per hour?

Glad you finally completed all of Amy’s events.
Amy can make a mistake once per day with a 25% chance. This does not depend on the number of production cycles.

Completely out of left field question. Anyone else here read the title of the game before looking at the thumbnail/banner pic for the game and just instantly thought of a James Brown song?
