I've been playing for a while now and haven't noticed any bugs, but maybe I'm just not very observant.
At least, I don't think there are any game-breaking bugs that can't be fixed, no matter what you do.

I'm probably missing something obvious - got a shipment I want to send but I guess the loaders are missing. I don't see an option to pay them, only an upgrade that makes them faster.
You must go to the 30 $ "Greenie Park" in the City Center and there meet with people. (Perhaps somwhere else too).
You must look that they are loaders.
Then befriend them and look at contacts.
Bring their friendship-rating above 50 %, for example with sex.
When it is above 50 % then click on "view" on the contact.
Then an option of inviting them to work as loader appears.
Most will not work for you because you are a criminal. I guess only 25% of them wanna work for you.
Those who want you can get under "view" - options then.
They will cost you daily which will be taken automatically from you.
Some things to look at

i hope there is more Crew training system soon. it's tedious to wait for them on certain activities to level up them up. i have SO MUCH MONEY LET ME PAY FOR YOUR DRIVING LESSON AND HOW TO STEAL SHIT!
I have played until a point when i took over the harbour and the bikers.
Which was pretty easy because i found dialogues to do so and was able to fullfill the criteria of doing so.
On the map is also shown "Yours" to tell me these areas are mine now.
But how do i take over Mafia (Suburb Area), Gangs (Downtown Area) and the City Center?, i don´t find any dialogue or option which indicates a take-over.
My gang-strength is > 15800 at the moment, which should be more then enough.

The DP toy in the camgirl section makes sense for fulfilling anal and vaginal requests, but what does large anal actually do? I can't think of what other request it satisfies.
You have to go to your whiteboard in your room, and start a gang war with them. A meter will fill up over time as long as you have more strength than them, then once it's full you get another option there to finally take them over

my strat in the beginning was pickpocketing, sell the free drugs and open some wallets. Save some money. after that i bought the outskirt lab for drug production. i also do other side activities such as Hidden cam, Casino gangbang and strip club when there is still time. for end game, i grind by selling weapons at the Night club.
If you focussed on beeing a fighter (+4 to combat through starting-background) then first go to the gym in suburbs to get the trait "fitness" until there is written "no more gym needed", that gives you +15 to healthpoints. Meeting males at the nightclub in downtown and having sex (analsex) with them is a fast way to get the trait "analqueen" which gives another +6 to healthpoints. You can delete the contacts later if they get on your nerves.
After that go to the harbour into the dark alley and "look for trouble", besides meeting prostitutes there you will meet also enemies there which you can beat up, they will give you a lot of money and stuff.
Your combat-rating is climbing up too by doing this, you can get +10 to healthpoints, +3 to combat and the skills "Jugular", "Deep breath" and "Money of life" at your peek of combat-progress.
Going to the gym will also trigger a dialogue after some time training there. You will be told about the underground-fighting-ring which will be open after 19:00 at the evening, you can raise your combat-skill for money there, giving you another +2 to your combat-skill.
You can probably beat 3 to 5 enemies in a row when all is maxed out, perhaps only 1 or so at the begin of the game.
Even without +4 to combat through starting-background it is a nice way to get money quick, perhaps when you play as slut instead with max charm.
When you play as a slut with +4 to charm from background, then you can also go to the strip-club in suburbs and start dancing there, sometimes you will get the chance to get fucked by customers which pays extra and has a chance to raise the analqueen-trait too without the need to add contacts early.

Yeah I've done all that. Just didn't feel like it gave me enough money to balance out gang costs. I'm usually rich pre gang, broke after. Unless I spam heists

Also do you plan to have all side jobs scale with rep or just csmshow and gigs?

Stealing from the marketplace doesn't take energy.
Car theft gig shows the reward as $. For example if the reward was 3 cvc, it'll say I got $3. Some of the other gigs are fixed for this however.
Multiple crypto are listed at prices above maximum price according to the hacker info sheet. Not sure if you raised price ranges but didn't update the tip sheet.
Also yacht parties never happen. I wait a week and nothing.

I forgot to adapt reward messages, yeah, thanks, will fix it.
And missing yapping should've been fixed in v0.11.1, i dunno why you've got this bug.
Added... kind of. Starting from v0.12 you can once in a three week train the whole gang if you captured the turf. Now i thinking about it, and i should've make it so you can train only specific accomplices, not the whole gang. Might change it, eh.
Just more money per request.

Edit: I’ve checked all burglary events and haven't found anything that sets stamina to 0. But it does drain a lot if you choose to run away, and it's intended.
Pickpocketing shouldn't take any energy if you have a pickpocketer trait.
