Yes, we want to try and include multiple ways to gain exp to make things diverse. We also plan to add difficulty settings that directly affect the amount of exp, money, and other stuff you accumulate over time.

We definitely have ideas for NTR content with Alice, Julia, and other new characters. NTR is one of the optional fetishes, so I can't guarantee it will be in-game immediately.
What is the plan on combat side of things? I think original had pretty decent combat mechanics with grabs or rescuing. And will you do any further improvements on slums security? I think implementing a rival gang would be better than fighting randoms all the time. Some random events with them in the slums would be pretty good imo.

Is it? Really depends what you want there. If the only thing you're looking for is gambling, that's pretty trivial to add, even for me. Do you mean to say you want it as an expansion to your brothel? Do you mean a place in town with characters or some kind of event to progress?
It might be a big ask if you want a casino in town that has not just "click to lose money and maybe gain more" but actually has mini games.
Could be a big ask if you want a big win in gambling to get you a shot at winning a slave after you're gambled your way into VIP stuff, and have the slave their own specific character rather than generic whore.
Could be a big ask if you want gambling debt to result in them coming to your house to rape your girlfriend. That event basically exists anyway though, since your debtors do kidnap Alice to rape her anyway, and also come over to your brothel to rape her again later, while the leader of the thugs remarks "wow you just like watching your girlfriend get raped, huh. Kinda hot, we should fuck too"
I think that dev was getting kinda tired and lazy at that point.

When it comes to the combat side of things, we plan to keep the combat as close to the original as possible, at least for the demo. After the demo is out, we do plan to add some things. Mainly, we want to add more attacks. Currently, we are playing with the idea of making starting classes for the mc. Aside from different base stats, we plan to add a couple of special attacks for each class. We still want to keep the combat pretty simple.
We do plan to add gangs into the game. Basically, each area will have its own gang and gang leader. The gang leaders will act as a sort of boss before moving onto the next area.
I can't see why not. Although we would probably add one later in the game and not at the starting area.
We still plan to add the female mc, but that will be later in development.
NTR content will be optional. At the beginning of the game, you will be able to toggle NTR on or off through the options.
You are correct. I have an alpha for patrons, but it contains very little. It only has the intro and toggleable sex scene. It just shows patrons the new art for location and UI really. Once I have a demo, it will be released for free and I'll be sure to upload it here.
We definitely plan to give Hitomi more love. Although content for Hitomi (and Quests related to Hitomi) may be slow at first due to the number of unique assets we will need to make that we won't be able to reuse.

Dammmnnnn. Been a long-time fan of the original Simbro, and this looks fantastic. Shame there's no actual playable demo yet, but I'm definitely keen on this project as a whole and will keep my eye on it.
