There's apparently a new 1.1.1 vers but it's not here. Are we waiting until the update or something after December?

In most games, versions like v1.1.1, v1.1.2, v1.1.3, etc, means very small updates, while versions like v1.0.0, v1.2.0, v1.3.0, etc, means bigger updates, and right now we're waiting for bigger update, the v1.2.0 that should come out in december. I think that there is no point to update game with every small update, but it should be updated if it has critical bug fix. I bought SiNiSistar2 on DLsite, but I'm still on v1.1.0, I'll update it when v1.2.0 comes up, no need to rush.

1.1.1 is just a unity security patch I believe.
New content is coming later.

I think the version will be uploaded after 1.1.1 because that version doesn't have anything relevant other than a security patch for Unity. The version after that one brings new content and is the one they will most likely update here.
