There is no singular reason for the remake. One thing a lot of people don't seem to understand about game development is that you can't just simply keep adding things to the same base and it just always work. There is only so much you can change with patches and updates. There are a lot of reasons the engine needed an upgrade such as better performance, better scaling, newer versions of middleware, a swap to an entirely new dependency and removal of the old one, from-the-ground-up localization support... etc. It wasn't just a swap from 2D graphics to 3D. A lot of other things under the hood changed as well. I could list everything that has changed in the actual code-base between versions, but it would be a long list and I'm sure nobody here would care to read it. The point is that adding the new content to the original version would not have been feasible and while it is a bit annoying to have to wait for the old content to be ported it's also nice to see the developer experiment with new ideas that are only possible because of the switch.
As for your other complaint/suggestion... I somewhat agree it would be nice to have more "development" (aka grooming) but there is only so much that you as a player can do within the month. Smoothing out the "phases" could end up making it so you're required to play through multiple times. It's possible this isn't what the dev wants and instead wants everything to be accessible from the start. IIRC the original 2D version didn't have any sort of meta-progression and every new game was the same. I do agree with you though, it does feel like the story is rushed but I understand that as a consequence of the short time frame compared to other similar games which give you an entire year or longer.
It is a single developer creating it in their free time outside of their full time job. Let's see you do it faster.bruh, this game update is so slow to the point it people could find One Piece already and proceed to Two Piece
