Stats are not bad if you remove debuff from Womb of Lust. Enough skills to win any fight (although Rampage or Offensive Stance could help). So the problem probably lies in how you use them.
Do you know how ambushes work? Are you using Tactical Advantage state? What is your strategy in combat with some strong boss pre-Festival (choose any boss you want)?
Don't forget to use some emerald Tea to reduce the Womb of lust curse. This curse reduce your willpower which debuff drastically your attributes (see all your attributes with minus red numbers). At some point, if you're not enough aware of this, your willpower will goes down to 0 and your attributes will be reduced to the half, which is very bad in combat time. I would also advise you to grind a little more. Work at the workshop to gain HPs and earn some money, do all the side quests (there is a lot to do in this matter). I started the Festival of Greed around day 70 with more than 350 HPs and ~ 150 MPs. But there is also a good trick to catch the Slim's summoner from behind, in the basement. There is a 2nd path you could walk to, from the mansion, where there is some water, and if you learned storm spell, you can activate it before hand, and gains two turn's combat in a row as tactical avantage. It's weaken a lot of ATK/MATK and DEF/MDEF + AGI from ennemies. Web and stasis Bombs are good to numb or immobilize too, and thunderbolt is powerful enough to numb and kill. Once numb or paralyzed, use martials weapons like pierce or slash. Also, you can see what your opposants are up to, just above them. Learning to read all the symbols you see here is kind of mandatory if you wanna win all the battles. Arrow up are dangerous so you have break it before they attack your party and get your defense ready, while arrows down is the good time to throw your most powerful offensives. I could go on and on like that for hours, but in the end of the day, you have to dirty your hands. I reconise that the guide could be mor detailed, but I had a good time ( and some good hold fashioned fits) to get my ass kicked a few times before starting digging for intel and take notes

I think grinding HP is not necessary in this case because it's already big enough. I would even say my opinion if you are grinding in this game you are doing something wrong.

Blessed Water would remove debuff much better than Emerald Tea that becomes available only on Festival.

I manage to ambush (thx save scuming) most of my fight, cause it give you one free turn. When it came to boss, most of the time i used the Star Knightess because they all beat me, the only one i didn't use the collar on is probably the white wolf, and the Shaman goblin from the forest, but the bandit leader, the blue orc, the two bandits (after the bandit leader), the first demon, every one of them just shit on me. Every attack from them manage to put Aura half health, and without healing i was dead on four to five turn.
I'm not even talking about the other party member because Charlotte got one shot by everything, the dude who deal piercing dmg hit hard but die quickly thx to how martial art work... And John, or whatever his name, is less tanky than my slime and he's supposed to protect the party...
So basically Aura did all the work, Charlotte buff then die (mostlty) next turn, and the two other are just meat shield, Paul (piercing guy) can deal a good amount of dmg if enemy focus Aura.

I think you need to return and try to beat bosses without Star Knightess. This game is a puzzle and breaking through each part of the puzzle is not the correct solution. For example, you could start with defeating the first two duelists without SK. It could be done without learning new skills so good to go through at the start of the game.
Also, just to check, you are playing on Normal difficulty, right?
