The TV shows have been very hit or miss. Andor was awesome. Boba fett was an uncanny snore fest. Mando season 1 was awesome. Mando season 2 was meh. Kenobi had its ups and downs but was mostly good. I have not watched Ahsoka yet.
Glad it all exists but there have definitely been some fumbles
With the amount of content Disney pumps out, it would be a miracle if everything was great. The fact that all of the shows were, at worst, very mediocre, is itself a feat. Funny though, as I don't know very many people who would call Mando season 2 "meh", if they liked season 1. Though "meh" does seem like a prudent reaction to season 3 (and Obi-wan/Bobba Fett), season 2 was pretty great. What strikes me as odd, however, is that the only series you did not mention - Andor - is quite possibly the best written Star Wars content ever.
As I see it, Disney is doing fine with the IP, aside from the clusterfuck that was the sequel trilogy. Any time you set out to make a trilogy, with absolutely no idea what story you are telling, of course the result is going to be an absolute mess (especially when the person in charge of the middle portion, has absolutely no respect for the IP they are using). There is a direct line between how much control over the product is given to Kennedy, and how bad the result is - Fortunately, Disney seems to have learned that fact, by the end of Epidode 9.
For the record, the prequels were not bad movies either, aside from the 3rd lap of the pod-race and every line of dialogue, and the fact Lucas chickened out and didnt make Jar Jar a sith lord. But Lucas was always frak'n awful at writing dialogue - There just happened to be exponentially more dialogue in the prequels, than the original trilogy, so it was exponentially more annoying.
