Yeah, because the value are all in the RAM "Random Access memory". They change when the games reloads those value, like if you load a save or restart the game or even restart the PC.
Cheat engine has something called a "pointerscan", which keeps track of those and can see on restart to what address those values changed.
You need to keep rescanning the pointerscan till you only have the addresses left that matter and save them to a "table".
If you have no idea how to do that, time to fire up some tutorials on youtube... or install one of the cheat plugins that some users shared here.
Here's a bepinex cheat . From memory it works with F1 and F2 . I've never figured out how the fuck CE works and even tables I've downloaded for games tend to not work.

Some people wanted clothing damage and ability to mess with the clothing a little. I also guess making so many sprites wasn't easy either.

Yes, there is somewhere a save where you just need to beat the last encounter (it ´s kinda easy) and escape, after this Gallery is open.
put this in User\yourusername\AppData\LocalLow\JaShinn\Syahata's bad day and beat the boss. I've modified the save so you have 9999 bullets in the rifle, just don't reload and keep firing
