Redux is a remake with more polish to the UI and expanded scenes/artwork, some of it is from using AI. The original version is much further along in the story.

Same way as previous versions. Go to map screen and use the time setting there.

There is no QoS version. There is a separate brief netorare route that players can choose in v1.07.3 "Season 5" which has some content featuring Darnell.
