With Selkie you need to have a point in the Sudden Advance to get close enough to her and then you can use Full Nelson to grapple her.
From seduce stance to grappling: Stop Seduce -> Guard -> Sudden Advance -> Full Nelson -> Grip -> Takedown.
Usually you can check what stances the skills activate and where those lead into from the skills menu, it's not that complicated, but it can look like a daunting task to figure it out.

Penetrations/Sex can only be done from certain stances on enemies that are presenting, swore that they made it so you can do it while in the seduce stance.
