In the case of Diana, it comes down to boosting your Dominance stat, or playing without forced transformations and refusing any of the transformations.

Not a lot, ver 5.3 was about technical updates, the conversations with all characters, while interesting it isn't truly worth it for a new game for now, and those random events it isn't truly something that you should focus to find, I would wait for ver 5.4 with chapter 3 and Sophie before actually starting a new game.
