Choosing the option you mentioned (spend the night in hotel room wanking) leads back to the timed response choice at the hotel and sex unless you choose the bottom option during the timer. The bottom option during the timer takes you to having a meal in a restaurant with Jen, a loving peck on the cheek and the no sex ending of the game. Selecting the top option during the timer starts the sexy part again.

There are four possible endings based on the choices you make. Try making different choices. It took me all of 30 minutes after my first full play to see all of the other possible endings. Replay, new choice, new result... until you see all four. However, I don't see the point in chasing a no sex ending here. Best way to have no sex with your sister is to avoid playing this title. That is the entire point of the novella, the Escort IS your sister!!! Hahaha

This has been partially answered, but here's the whole concept as it was initially envisioned:

At that point, in-game Dr. Fronkonstin is telling you that you probably didn't make the best choice by leaving the hotel room and going to the burger place with your sister, so he's giving you the option to leave it there and end the game, or go back and try another way to spend the night.

If you think about it, MC still doesn't know that Jen is going to stay with him at the hotel, so as far as he knows, he's going to spend the night alone (and probably fap a couple of times to release all the tension/anticipation) because "obviously" his sister is going to leave. That's why he talks about going back and jerking off. It's only when you choose to stay that Jen says "Ok, I'll stay as well".

IMHO, incest is the most essential taboo that we have. What would happen if suddenly we realise we find one of our direct relatives sexually appealing? It’s something you desire, but it’s forbidden and that makes it even more exciting. The thing is that, when we translate that to the real world, in most cases it just doesn’t work. Too much personal stuff involved and we’re kinda programmed not to see our mom or sister as “hot”. But of course, in the fantasy world, it’s not your real sister. It’s a super hot girl that just happens to be your sister and she’s surrounded by all that taboo without all the less appealing stuff that goes with it.

I think VNs give the perfect frame to experience this genre. It’s easy for the player to step into MC’s shoes, you normally see the whole thing through his own eyes and you get to make some decisions so you can feel in control of the situation. And the situation is that you’re most likely going to fuck that super hot girl who actually loves you from the beginning and just needs to be slightly pushed towards the right direction.

Now I can’t tell you about more or less subscribers. I chose this genre because it’s my favourite and if you’re going to spend a whole year working on something like this, you’d better like the characters and what they’re going to do together. Otherwise, it’s very easy to feel burnt out.

You need to find the easter egg to trigger that scene. HINT: The easter egg is only available on one of the three final routes and it's not the most obvious path.

Now this is the way to do it. Wish more devs were like you. Start out small, get a completed project on the resume and only then progress to something with larger scope.
Instead of getting burned out, abandoning 1.5 years into a bloated AVN with too many characters and a neverending pointless story, you create something more fun and manageable like The Escort. Well done sir.

Frustratingly, I'm blanking on their name, but there's an award-winning scifi author that intentionally didn't even attempt a novel until they'd gotten a few short stories published. Always seemed like a more reliable approach than "I'm going to write the next Great American [or whatever] Novel on my first try" that all but guarantees failure by putting too much pressure on yourself.

That's because the easter egg scene is the initial and discarded concept for the epilogue, which also takes place at the pool. If you go back and find it, you'll see a second pool scene after the end.
