From my short bit of googling, Moira MacTaggert and Stevie Hunter both are in their mid 30s-early 40s with our game's timeline.

There is Lilandra Neramani who is at least physically* in that range but she and Xavier are very much in a romantic relationship with her actually being very doting on him.

To stretch. Valerie Cooper, but she's not the best option for a variety of reasons.

Psylocke's age is ambiguous because of the Betsy clusterfuck with her allegedly being in her 40s during introduction on a technicality.

*Shi'ar aging is different. They're avian with mammal like features.

I'll take it. I mean, if Buttholder and the other writers actually added Psylocke in they could probably just go around or ignore that entire mess with body swaps right? And hey, if Psylocke still goes through with the body swap it's the attitude and behaviour that matters more i.e. Storm. Also, if Psylocke becomes a Love Interest then does that technically mean Null got a 2-in-1 deal in terms of a girlfriend?

Emma is confirmed to appear as an antagonist in Chapter 2 but there's no official confirmation of when she'll become a Love Interest. She is noted as being Ron Chon's favourite so do with that information what you will.

As for Psylocke there's currently nothing official about her, she's just one of the more popular choices for one of the main Love Interest spots.
