Honestly it sounds kind of cool. I mean, think about it. Not only do you get a cool statue to put somewhere but you know that statue was once a person. And since magic is involved one would hope that said person is still alive in there, watching, sensing, trapped in a shell of stone. Looking at you behind those cold, frozen eyes. Forever trapped, forever broken. Eyes which you left for last so that you can drink in her fear.

Maybe I would even leave the eyes. Just so that I could enjoy it a bit longer.

Just did another playthrough on different PC using the files from download, it seems like her pic changes earlier than I remembered. You need to succesfully talk to her 8 or more times in total and pic changes on 5, sorry about that.
After you rack up that 8 successful talks (you can rack it up before you start petrification), you can just focus on tutning her to stone and not dying from exhaustion, other than stamina, libido and cash the rest of MC stats are useless at this point.
Aphrodisiac is technically not required, but it speeds things up (with aphrodisiac applied you need 1 penetration for petrification to advance, without it, you need 2 penetrations), just remember to apply it every night.
