I tried to make sense of the endings drawing but can't, I'll just wait for the new walkthrough to see if I need to restart. The three I was interested in were Kasula babymaking, yandere, and lorelei betrothal.
I don't mind our choices being locked in on chapter 3. I play these games for good stories not to be blown away by the amount of branching so hopefully it eases the development.

It ultimately depends. The one path that's heavily affected is the Yandere path - it's now much harder to get on the Yandere path because the Yandere path involved 'dumping' Glade at first by sleeping with someone else. Now that you can't switch between paths, suddenly, the Yandere path is no longer viable on many routes. There are still a few routes that will lead to the Yandere path but the conditions to get to it are a lot stricter than before.
Similarly, some other paths have stricter conditions. For example, before you could invite Lorelei to the Ball before deciding later that you liked Kasula better. So to get the "Kexplorer" ending, previously, you didn't need to invite Kasula to the Ball. However, now because you can't switch, you have to invite Kasula to the Ball to get the "Kexplorer" ending. However, I imagine most people doing a "Kexplorer" run would've invited Kasula to the Ball anyway, so they won't have to re-do their saves.
Because it's easier, I'll make four separate lists for you:
Won't have to re-do: Kunity (Kasula Pregnancy Path), Lethrothal (Lorelei Betrothal Path), Throuple
New Endings: LLamour, GLove
Might have to re-do: Kexplorer (Kasula Explorer Path), Life (Lorelei Court Path), Girate (Glade Trust Path)
Will have to re-do: Gandere (Glade Yandere Path)

At first I was disappointed in the lack of Glade. Then Glade appeared so I'm content now. I really liked the making of and can 100% relate to constantly reworking/scrapping things.

I think for me the main issue is the steps needed for each LI's sub-path (or however you want to phrase it). It's not a simple case of being interested in an LI and taking choices that benefit that path, but you also have to get on the right side of X person for path A, or not for path B, etc. for each LI, and for me it's not clear what the "correct" choices are for these, meaning the walkthrough is basically essential if you want to see the different paths and scenes.
Obviously you don't just want to end up with the usual complaint people have in this area though, which is "choices don't matter", so it's a fine line to tread, I guess.

I voted for 1 path per LI, but wouldn't mind 1 or 2 extra.
But I'm wondering if more than 3 paths is worth your time and effort. A pretty small minority (like myself) will play all the paths (because I like all 3 LIs). But if I only liked one, then I would probably only play her paths.
Based on the bitching and moaning here (F95, not just this thread), it appears that the majority of people can't even handle 2 paths. How many people are going to make use of all that work you put into that replayability?
(And from a purely selfish POV, less paths = quicker updates.
).That's my 20c, but at the end of the day, I love the game and I love all the girls, and will be extremely happy with whatever you decide. If there is 3 paths or 27 paths, I'm going to play them all and have a lot of fun.
While multiple paths sounds interesting, it would significantly raise development time... So I voted 1 path per LI.

So...what Tony said. I could play the story multiple times, bomb around with choices until I get all the different paths, but as the game grows larger, that is going to be harder and harder to do. Eventually a WT would be mandatory (hell, it kind of already is, if you want all paths). If that's how you want it to be, then so be it, a dev should make what they want. If that's not how you want it to be, well, it's better to work on things in the early stages than later.
I wouldn't go past nine...three paths per LI is plenty. A type of hardcore love or dedicated path, a more general path, and then some type of subverted expectation path (such as Yandere Glade). Not all three LIs need three paths either, if it feels forced. I'd gladly accept 2 for someone like Kasula that might just have romance or explorer buddies. For Lorelai, maybe you love her. Maybe you just want to marry her for the political gain. Maybe you want to fuck Glade on the regular but keep Lorelei as your political loveless marriage. Obviously some of these are just lifted from the WT but they are good concepts.

I think my preference is one path per LI (although I guess when it comes down to it, it really comes down to what you wish to do).
Cause like Milton said above, when it comes to games where there are choices for LIs (i.e. non harem games), there are times where I would just only pursue 1 specific LI's path only despite the game having several LIs (cause I only like that one specific LI).
Thankfully, with Tides, I quite like all 3 LIs, but at the end of the day I just don't think I wish to invest time in all 3 paths, and will most likely just opt out to choose which path I prefer to take with the walkthrough anyway if there are like 3 paths per LI.
And given 3 paths per LI will obviously increase development time (even though I'll only be playing 1 path), I just don't find it worth it on my end (i.e. wait time vs content I experience).
But as I said in the beginning, you really should do what you wish to do, regardless of what everyone else says.
