Found it. It's #35.

Any value above 8 will mean you'll end the demo as soon as you leave the inn after sleeping. Negative values seem to add days to the count (I tested -999 (gave me 1000+ days) and it didn't give me any immediate problems but I haven't tested extensively).

To those using MTool - I found the variable that dictates how many days are left in the trial. Open the [Var] tab in MTool and scroll to Variable 35. Click the checkmark and the days should no longer progress
