This time they miscalculated the time required to complete all their tasks. Going by their progress tracker, They're currently taking about 3 months for every 20% progress they make. So it'll probably be close to another 3 months for them to hit 100%. Then add 4 to 6 weeks for them to polish the update for release and we're probably looking at a release around April and May.
You say that like the progress of the last update didn't come to a screeching halt for close to a year after the artwork, writing, and animating were done. Not that I don't believe another three months is accurate, but you shouldn't assume that progress before now will continue at the same pace.

While It definitely won't take as long as last time, I've been following this game since version 0.3.01 they always taken an absurdly long time doing the polishing

Oh I wouldn't rule out, it taking longer then 3 months. Especially as they seem to be perfectionists when it comes to releasing the game. So if something feels off when they're completing the polishing phase, they're very likely to scrap what they've done and re-do whatever feels off. Regardless of how long a re-do might take.
Hopefully it won't come to that.
