This has been mentioned but I'll say it anyway:
Intimacy, hand-holding and deep connection: Yeah, sex is cool but where is the love?
Bisexual/semi-straight male PC's exploring their sexuality: I don't usually play bisexual or gay, but I like having the choice to if there is a good male NPC/follower/LI available.
Traps/Femboys/Tomgirls: There are some good games with this archetype, but there just aren't enough of them. They don't have to be feminine-coded or gay either. I just like the aesthetic of girlishness and twinks.
Male submissiveness: And here i want to be clear that I think there is a huge difference between submissiveness and femininity. A lot of games conflate these and treat submissiveness as taking the stereotypical "woman's role" in sexual encounters, or in general. It says a lot about the author when they cannot distinguish between femininity and submissiveness. I want to be able to play as a male character and be submissive and following orders without being someone's receptacle for dildoes, strap-ons and cock-binders.
Female domination: On the flip side to the above, conflating domination with masculinity. Women who are sexually dominant and that translates into "doing what the man would do" is such a bore. When I play a game and let the woman take charge (which is a rare option in many erotic games) very often this will lead to her taking the "male role" pulling out a dildo/butt-plug, or denying my MC to use their male parts because "they are the woman now". Whenever the dialogue makes reference to her using my characters ass as a pussy I roll my eyes. Women can be in control while still using their own sexual organs, damn it.
Taboo exploration: I like taboos, but I would like it much more in games if the characters actually behaved like what they were doing was absolutely wrong. Following characters that can't resist the temptation any longer and having to reconcile that they are going to break taboos and they get closer to each other for it is exciting! The obvious one here is incest, but even other taboos when written well make the whole things so much better. Player characters jumping head-first into deviancy is not exciting at all.
Mommy-domme/pampering: Women characters who force, or heavily encourage, other characters into a receiving role of motherly nurturing such as breastfeeding, grooming, washing, massaging etc. This doesn't need to include age-play (better if it doesn't), nor does it have to include sex, but just that the woman gets off on being a mamma goose and will take control of the encounter to let herself live out that fantasy is pretty darn hot. Bonus if she is just a little bit patronising, or an obsessive that admonishes you for being reckless/putting yourself in danger. Double bonus if she is the kind to force you to sleep with her so she can keep an eye on you while you're sleeping. Triple bonus if she wants to have another baby so she has more people to pamper. What can I say? I have a MILF type.
