The only way for me to get that minigame open was loading up a savefile from previous version. Everything was broken in it though...
Small bug
Somebody reported the Runny Makeup not properly cycling in the options even when it's unlocked.
Similar to this but the exact opposite (... yeah, I know how that sounds...) is the garters: way before the garters are unlocked, if you click on «No garters», it automatically switches to Garters A, and then you can't cycle them off anymore (you can't get back to No garters)
Of course, this fixes itself once you do effectively unlock garters, but until then, you're stuck with then

How do you unlock those classes? Do you need to have potions above a certain level?
Each course is unlocked when the previous available class reaches Level 1.
Assign a course (class) to a time period (upper left), click Start to send Hermione there.
After you advance time and Hermione comes back, click «Chat»: there's an option to ask what she learned
If you repeat these steps, eventually (once a course reaches level 1), the next course will be unlocked when you click that «How art your studies» option

Allright, I wanted to see what happens if you keep playing the minigame in the wizarding fashion class past the requirement for the spell
I ended up with 5 butterbeer, 5 wine and 2 chocolate on the very first day (I stopped when I unlocked all the "alphabet" of weird symbols).
You now have the choice to cast the spell with hilarious result (it's so strong every piece of clothing disappears, and anger goes up), or to click the little red x that closes the minigame, which advances time (so you waste the morning period, but you can simply take it back the next morning, with the benefit of having a pantry-full of consumable gifts – and Hermione is now fully naked for all Hogwarts to see...)

how do i lower the friendship level? i have it at the base of 4 and everytime i click on date night she says that she only see's me as a friend
There's an item from potion class that lowers friendship (called Black Lotus)
Also, I think certain bad choices, where you purposefully make Hermione mad, lower friendship too

Just send her to CMC class and talk to her after.
Dark Arts Homework can be used to reduce Resistance also, just like the Imperius spell (Achieved through the Dark Arts Homework), Slave Collar (Wizarding Fashion section), Gag (Wizarding Fashion Section).

Ok got it! Because I missed the moment and didn't talk to Hermione after getting #Reading = 1, and continued playing, the mechanics broke.
I dont think you got it, and im pretty sure there are no mechanics to break there. You can send her to any class you want, at any point of the game. The only thing you have to do is to send her to the library (via the reading homework, or what it was called) and then talk to her (via "chat") about her studies on the same day. That should unlock the next classes, then you send her to those and repeat the process a couple of times to unlock the next and so on.
To be fair, that system of unlocking classes can be confusing, even with the ingame explanations via the help buttons.
