When you start a new game, you get the option to enable cheats...there's a book in your house that you pick up and can then access the cheat menu thru your inventory
where exactly is cheats now have activated at the beginning of the game but i can't find it in the menu am still at the very beginning of the game

Bummer, I'm gonna need it. It's been a while since the Syfa confrontation and I don't remember who "the one who helped Syfa" is or if we even found out and couldn't find anything in the Sanctum.

For the porn. The story and gameplay by itself isn't worth playing detective with vague quest descriptions and the dev knows this, which is why they make a walkthrough and added a cheat book in the first place. Besides, I can't use my own wit when I can't remember what happened between updates for a particular scene which was such a very small part of over almost 70 hours of gameplay.

I mean sure then just grab a save file and skeem through the walkthrough for every sex scene since then there is no point inplaying it.

Which is not, since he actually spent half of those 4 months writing dialogues, plot points and especially making the murder case, he cares too much about his story and overworld. (And delayed the update for writing aspects)
Walkthrough is there to help clueless players along the way and cheats for some that just want to half the grind and get to the point faster (or just to mess with the game).
And even then Chyos has plans to polish more content in terms of gameplay and grinding spike, but saying that he didn’t care or knows that his “game” isn’t worth playing it’s a complete misunderstanding.

Does this update conclude the entirety of the Monastery arc with most if not all of the planned scenes for the Nuns?

No there will be more content in the future for this characters eventually

I'm 90% GOOML is referring to the far earlier interaction with Syfa during the Church initation ritual as the item of confusion.

That prompt is referring to whether your sided with Syfa or Mira in the Church initiation finale; specifically, if you took the prompt that said something like "Now it all makes sense" to Mira after Syfa tries to spread dissension about Mira and Aidolen - to me that would qualify as the 'one who helped Syfa'. Other than this, perhaps the choice matters when you first arrive at the monastery and examine the runes on the floor - whether you summoned her or not.

Then, there's also vague dialogue about "the one who helped Syfa" which is who I'm assuming helped her escape.... after that, I dunno. Not really a lot to go off of here.
