The way I see it, I think her son is much closer to Sophia than the neighbor kid, plus Sophia already loves and trusts Dylan by the fundamental bond between Mother & Son so if, or more likely, when things go further with their relationship I think it's more possible that Sophia would engage in sexual deeds with her son sooner than with any other man not related to her, other than her husband of course because it's the Mother & Son bond. That's what I think at least.
Also, I think that from everybody else, the ones Sophia feels the most comfortable and closer are Dylan & Ellie, so I also believe that Sophia if will engage in any actual sexual deed it will have to be with Ellie sooner than with the other women...and I'm talking about actual sexual things (at least as far lesbians can go) not just merely kissing or touching.

Nah, she doesn't have to become a lesbian considering she starts as a straight woman, she is more like experimenting or curiosity maybe than actually switching sides, just like Ellie, she can either experiment or become a lesbian or remain straight and date an asshole like Logan.
As for sex with Dylan, it will happen, I think it could happen sooner than with Amber's son but the plot of the game is how she takes the journey from being a normal mother into something more with her son or experimenting or exploring with her daughter to the point of having incest with either of them. It's just that it's not going to happen right away and immediately like some other games, this is more of an erotic novel and others are more like porn games when sex happens very soon, in this game it has to take its time and it has to come naturally for a mother to engage in incest with either of her children.
