It's likely Scenario 1 with a dash of Scenario 2.So, to resume what we know:
How do you tie together these facts in a storyline?
- Liam has a gambling addiction
- Don approaches and flirts with Sophia at the roulette (because he was struck by her beauty, class etc)
- Liam tells Sophia he lost at poker and they are in huge debt
- Don calls Sophia to set up the meeting (unknown how he got the number)
Scenario 1 - The simpler one
Everything is what it appears to be and logically to expect: Liam did lost at poker, Don just got lucky that the beautiful woman happened to be the wife of his debtor. Mafia has its own way to get the phone numbers of the people
Scenario 2 - A bit of twist but still likely
Don spots Sophia, he is struck and he "sets up" Liam with the poker game so he can have a leverage to pursue his plan with Sophia and Larry.
Scenario 3 - Liam is more involved in the deal than we know
Same as 2, but Don and Liam already had a discussion about the debt after the game and Liam kind of agrees to the deal (at different levels, according to your taste, he could simply agree to the visit, up to offering her as a partial collateral or worse (unlikely...)
After all, Liam was kind of quick at accepting the visiting behind the glass and at encouraging Sophia to do so (nexer ). And guess who gave Don the number...
Scenario 4 - Dark and evil path
Liam was already in debt because of other nights spent at the casino, made a deal with Don involving Sophia as collateral, the casino night nothing happened poker-wise and it served only for Don to agree to the deal after checking out Sophia.
I proposed (maybe other did previously, I didn't check) this as a pure wild speculation but I'm the first to say that's unlikely and as gingersweetgirl pointed out not really in the spirit of the game.
Not to mention that it also creates a problem with the whole storyline as Sophia can also leave the casino with Liam (hzjujk ), what happens to the debts in that case? It could be solved with just a business agreement without getting Sophia involved, but... nah!
Looking at it in those terms, I personally would be in between Scenario 1 and Scenario 2. A Scenario 1.5 or maybe 1.75 if you will!!So, to resume what we know:

Once again thank you !! Liam stated high class . And when he went the first time supposedly ? Sophia went with a elegant dress while Liam went with a denim shirt and pants with sneakers . Hmmm . So something strange that the management didn't tell him the acquires of dressing . Elegant .It was Liam's idea and he pushed a little. Liam knew that only well-dressed people can enter.

I'm hoping for a Sophia you can interact with, LOL.When the game ends, will the renders be already ultrarealistic and who knows holographic perhaps? We are talking 15 years from now apparently at this pace, so everthing is possible
It always made me laugh, the way Liam is dressed to go to the casino.I do remember thinking it was strange for Liam, a man who works in high-fashion, to show up at the fancy casino in double-denim and boat shoes.
After Sophia points Liam out the Don has a disdainful line about what Liam is wearing, again I'm more inclined to believe the simpler answer - the scene serves to juxtapose the two men: Don Morello is wealthy and sophisticated (in a full tuxedo) and scoffs at Liam in his casual button-down.
One thing I will say that gives the Liam-already-had-debts theory some weight - if the theory hinges on Liam spending some of his late nights at the Casino when he says he's at work, pinning down when his pivotal casino trip happens would be helpful.
To that end, the Good wife path (which to date has not seen any mention of a gambling debt) has Liam keeping pretty much the same late night work schedule the whole way through - with 1 exception.
Day 11 in the evening;
- On the Good Wife path Sophia calls him home early with tickets to the Opera, they go, come back, make out in the entry hall then go up to the bedroom for some fun time.
- On the Filthy Wife path Sophia doesn't bother calling him, chats with Ellie, then ends up watching a little porn on the living room TV - when Liam does come home that night Sophia points out "Wow, this is a new record! You've never been this late!"
We can also spoil the game for ourselves by asking the lovely people who know how to crack open the game files and look at the code - to ask if there are any flags that pop-up at the end of Day 11 like a 'Day11Opera=Yes' or less subtly 'LiamGambledtheFuckingHouseAway=Yes' (I don't know what they would actually look like)

In my first attempt I used jquery(wrapall), but the game has jumps that break another jumps. It didn't work well so I created my own script. It is made without any libraries, but before, to clean the script and create the html tags, I used Perl.Wow!! Impressive! And very useful! Thanks a lot for doing that!
