Okay I did some testing and here is what I found:
Kicks do more damage than punches, which means that Muay Thai is the best in terms of pure damage output while standing
However, Muay Thai has less defense and stamina than Kickboxing, so it's a choice between better standup or better defense
Boxing does less damage than both in the standup, but it's better than Kickboxing in the clinch and the best overall for ground and pound. If you want to use wrestling, boxing seems to be the best match for it (like in actual MMA). Boxing also has the best defense overall.
Judo is the best for aggressive submission hunting and positioning, and decent on defensive subs
BJJ has the best submission skills, but it uses a lot of points to get into position for subs, so it's better to just wait for them to shoot and then perform a submission
