Where is the dialogue in the game? Almost everyone I talk to, the words are missing and I have no clue what is being said.

The same problem happens here and I still don't understand why.
Playing the normal game and suddenly the texts of any dialog disappear.

It's apparently connected to the other new scene. Try visiting that character again later. And then try to ask a notorious hoarder about the gift you received

By increasing the pink bar to the right of the screen when you are in the dungeon. Once full, you can use a spell to have a sex scene with enemies who have a heart in their name.

When you fight monsters and hit them or get hit a bar on the right side of the screen will fill up. Once it's full access your spells and pick Erza's gift. A new heart icon at the top left screen will appear to let you know that you will get a scene if you defeat the enemy. This only works if the monster has a <3 at the end of their name.

An empty heart behind the monster's name means you haven't seen the scene yet. Filled means you already saw it.
