Humm... I'm not sure if it's because of the mod, but there's been some weird bugs going on in the last few steps of the game (last so far, at least). I left Katie on her house, and then the day seemed to start again, instead of having the date with Hanna. Then a "new" day began, and it was actually the day before that. Or so it seemed, because then I was allowed to go to the cafe, and it looks the date already took place, and I'm her hero ¯\_(ツ)_/¯ .

If you're not on the Katie route the first version of 0.7 made that happen. recreation had either posted a patch for that or updated the version after I reported that bug here.

The "Katie route" is the "coerced" one? I mean... She seemed to be somewhat "willing", but I still wasn't a fan of that kind of approach, so I chose not to take that path, believing I'd be rewarded later on for not pushing her and, basically, confirming her theories.

This is an odd path and quite unique. For full disclosure the MC believes that they are coercing Kat, she knows that she could stop it at any time but chooses not to, there isn't currently a major negative side to playing hard ball with her so go for it, the content isn't going to get extreme on you or anything.
