I doubt you would be able to find the sprites/assets without directly going into the game files themselves as BtD isn't open-source. That stuff kinda leans towards intellectual property, which I doubt David would publicly share.
Here's the problem: Just ripping all the assets out of the game isn't going to do you much good, otherwise someone would already have done it. BtD's animations aren't sprite-based but they use seperate body parts that move around and get deformed. So if you extract assets, you get lots of body parts as a result, no sprites. There's static images as well, but those can easily be found in galleries online already.

It was just a weird version number to have with a 'completed' tag on it, but if it's done then it's done.

No, he is working on Horror in Hongdae at the moment and has been for over 3 years now. Once that is finished, he might make a sequel for Dune. Ideas exist, but nothing concrete.
Yep. Apparently you can get him to attack before bringing your concubine to the palace, thereby preventing her capture.
It's complete, but likely never finished, at least not until David decides to make a sequel. Behind the Dune is basically a side-project now, that David works on every once in a blue moon, Horror in Hongdae being the main project. BtD got an update recently on the occasion of the new movie release. The last major update before that was quite a while ago and added the ability to terraform the planet.
