I know the context of the conversation was about keeping in contact with friends post graduating, but Sage does bring up that you need to fight to make sure they're apart of your future and that if there's someone you don't want to lose you let them know. If this is her outlook for keeping friends a part of her life then it'd be safe to say that this would also apply to a relationship where the ILY feelings are mutual and her partner talks about seeing a future and a family with her.

If you mean the scene in the library of episode 6, they only talk about her dissertation research for her current study.

That and of course the whole after graduation talk, so like I said we don't know whats going to happen. Maybe she will do masters program, maybe she will work nearby or maybe they will work out a long distance.

Sage with blue highlights in her hair however would look very hot. The tattoo, not so much. We already have a red-haired tattooed girl in the game, we don't need another one
