There is very little chance that Madame Rose recognized Sage (if she knows her at all), at least while entering (the only moment we see her). She only saw Sage from the back or at most half of the side of her face and Sage wore her hair in a way I don't believe we saw her wearing it yet.

Indeed. Apart from down and parted in the middle, ponytail and two pigtails -unless I'm forgetting another one but I don't think so-, that is the first time she wore her hair that way.

It is arguable that it's easier for the manatee to recognise her since she has less hair "hiding" her face, but I believe that the former looks away so as to not meet MC's eye and not MC's and Sage's.
