The average 4k renders I made are around 3mb, the 1080p variations (with light post processing) are around 400kb, so using linear interpretation (which isn't the best method admittedly), Episode 11's renders which are around 3.78gb would be roughly 28gb
He's probably sharing raw renders from the renderfarm. As far as I'm aware, most devs render at 4k, then downsample to 1080p as 4k downsampling retains better quality than native 1080p

Wow, that is a lot smaller than the answers I get from Google, that say the average 4k size in 3840x2160 pixel is about 24 MB, and that 1 minute of animation in 4k for consumer use will be around 375 MB.
