There's a threesome with her and Quinn that you can buy as a restaurant customer, but it's not necessary. Otherwise yeah, you don't need Quinn or the restaurant (unless you want all her lewds).

Don't do it, you will be forced on some events and story outcomes. I have a few saves with minigames disabled and it's a total disappointment. It's not just a matter of money, that is easily solvable with enabling the Console and setting manually the money value. It's better to enable minigames and use a mod to deal with that cancer. I modded it myself because minigames after episode 9 became a real pain in the ass but you can use Scrappymod (but read all the info or your next episode will crash). If you like to do many paths a mod to skip/cheat minigames is mandatory. Just do not mess with other values (do not try to see all scenes in one path) or you break the game.

I'm guessing that this is a hot take but hypothetically if the game was to start over DPC should have just made Quinn a main girl.
I'm not even saying this just because I enjoy her route but she's one of the more interesting characters and is connected to two of the main plot threads (restaurant and drugs).
