Dude redoes and re-renders the scene if it seems to him that the reflection in the neck of the bottle is "wrong" (as he stated in one of status updates previously), but at the same time he is in no hurry to correct such obvious mistakes like a fork hanging in the air, that he made but hadn't noticed (and neither his testers and beta testers as well).
This is his signature style. He spends a lot of time correcting mistakes, sometimes the smallest ones and those that no one would notice. And this is worthy of respect. BUT. At the same time, he is in no hurry to admit and correct what he missed. The reasons may be different - his ego, or... in a way, it can be beneficial. An error with a year on the calendar is the ground for theories and discussions. There is even a double benefit here - not to admit or correct your mistake and leave it as a base for discussions and the craziest theories of the game's fans.
He has to adjust this date in asset every time when he works with a non saved scene. He started to work on the game in 2018 or even earlier. Episode release dates and according data:

As you can see, he had to adjust it every time and he DID it in every episode, EXCEPT those specific scene in EP6.
We never got a flashback in the game scenes without warning or something. So far it was MC's story about Zoey he told to Bella, a couple of flashbacks as an episodes intros, Jill & Bella conversation about drugs and Lana. Maybe something else too. So the claims that this particular scene in Maya's room is shown from the future (4 years later) are groundless and delusional.

You know clearly why characters you mentioned say things you had also mentioned. The reasons, the timelapse, etc. EP6 - final scavenger tasks and fake threesome. Josy is quite NOT comfortable, she is just more relaxed than Maya and she is excited by the whole situation (free tuition possibility - she was thinking of benefits of this too, sharing the MC between herself and Maya, public sex itself, etc etc)
Derek is considering leaving because he is in college for Maya, not for himself. Josy - because she is not sure is it what he wanted or she blindly followed her father's "path". Quinn, etc, etc. Every character explained things you mentioned quite easily and reasonable. Of course if you can and want to read and not delusional with wishful thinking and bending the pieces.
We won't see any sensations or "wow" like revelations for Bella. It's probably some sad/depressive story from the Bella's past. Preview is a flashback from Bella's past when they (Bella & James) moved into her current parents house. Or, maybe in a contrary, it's a James moving out moment, but it really changes nothing.
