I really had to think about the variations. I'm thinking there will be 6 variations in the LI branches: Jill, Isabella, Sage, MJ, Josy, or Maya.

That leaves us with 9-14 variations. These could then belong to the "OTHERS" branch: Elena, Sally, Camila, Melanie, Sarah, Jade, Nora, Lily, Nicole, Heather, Cindy, Tara, Tiffany, Becky, Riona, Quinn, Zoey, and so on.

LIs are girls with whom the MC can enter into a full-fledged committed relationship. Up until episode 11, there were five of them; now there are six, and it's clear that this number will increase in the future. I don't know how you read, but in the latest Q&A, DPC confirmed that some of the side girls will become LIs.

That's not an official definition anywhere I've seen, largely because there isn't an official definition beyond what the letters literally stand for. Generally speaking though, it's a "love interest" as per the initials, not a "committed relationship interest", so plenty more than six here. What you're referring to as LIs for this game is what have been termed MGs (or "main girls"), and there are only the five initial main girls. All the side girls would also usually be classed as LIs.
