The game treats you as if you were "dating" both Maya and Josy until she comes to the MC's dorm no matter what you do, correct? More specifically, how do I avoid Maya and Josy's path from the get go?

You can't. At the beginning of the game you are told that mc has a crush on Josy, and nothing changes that in the course of the first season. With Maya it's not as clear-cut, but for all practical purposes it's the same.

In the second season you are free of sentimental ties with them, but you still remain friends with them

Hard to say, AL is a smaller story, so Megan is more preponderant, in the end it is still her story.

BaDIK is a larger, more varied story. So the preponderance of Maya and Josy in the first season is perhaps more noticeable

I don't agree with that so much. How is something you are told more believable than something you are shown? Josy is 100% a (pleasant) imposition

You can set major relationships to friendships, or never advance them past initial friendship stage, fairly early on, and any sexual relations with side girls are opt-in only.

The only exception (to some extent) would be Maya & Josy who are a pair; you can focus on one of them though, although whether that actually leads to getting together only with that girl eventually, is anyone's guess at this point.

Slowly but surely, I get the vibe she'll be a possibility soon, same thing with Sally, and perhaps a chance at something with Bianca. I know it's a shared vibe with many here. 'Others' may become a bit wild.
