How do you trigger the peeping tom scene? When the FMC’s sunbathing, I saw someone in the bushes—was that him? But nothing happens in my gameplay

You need to have a low relationship score with your husband (and probably lower morality) to the point he's always too tired to have sex when you go to bed. Then try to initiate sex with him in the shower, in the morning, and eventually he'll want to do anal. Basically, you need to reach a point, where he's primarily putting his own selfish desires above those of his wife. Which allows him to contemplate having anal sex with her, and possibly cause her pain in the process. Before that she'll have to get over her distaste for BJs, so when she's comfortably giving him BJ's both in the shower and at night, you're likely close to the point that anal sex is on the menu.
Bear in mind, this is likely putting you on a path, where you or your husband could end up cheating. My guess is, that further down the line, you'll be able to have anal sex without risking that.

I was able to get to it while having a 'perfect' (18-20) score with the husband (but both of them still cheating with each other). Felt like a bug though - she says no, tries to leave the shower, then the next scene is the forced anal sex which she doesn't like.
The other path was the choke and slap ass during morning sex, but I can't get both of them to consistently work at the same time. But, they do end-up liking the sex.
This is why I found the arousal score tricky - you need to get it at the right level so both of them enjoy sex.

the 3rd fashion shoot where she meets a producer
Liliana boob play (my alternate path, all Liliana no Samantha choices)

The way I'm playing it, the husband's corruption hasn't changed at all, because I make him resist all temptation. So maybe it's dependant on corrupting Emma, or lowering her morality (which would happen if you allow her to go down the cheating route). Emma starts off with 10 out of 100 corruption, whereas the husband starts out with the equivalent of 50 (10 out of 20). So maybe his corruption starts off high enough to do anal, and it's Emma you have to raise sufficiently for it to happen?
Low relationship appears to stop certain sex events happening between husband and wife, with him always too tired or in a hurry to get to work, if Emma tries to initiate intercourse or cunnilingus in the bedroom. The only exception seems to be BJs. He always accepts them. So it looks like low relationship makes the husband really selfish (likely because of his escalating suspicions regarding Emma's behaviour with the neighbour).

Btw, I also play the cheat version. Just keep going to the photographer whenever possible (there's a schedule when it's open), but don't select the lingerie shoot. This is where Emma's time management becomes tricky. So I prioritize on getting her corrupt and exhibitionist as possible, exercise/fitness is 2nd. And I make the hubby corrupt also, maybe the reason why I was able to trigger the anal shower scene even if they had a nearly perfect relationship score. There's sex skill points, so another thing to manage. I guess it goes higher if both of them make each other orgasm, which I think is tied to arousal stats (invoking sex or foreplay on the right arousal status).
