I ask only, as I completed everything and rescued my sister and it went to the mc recounting her story and ended.

Nope, as with all game releases, 1.0 is when a title is "content complete". Make sure you keep a save before starting the last quest.

Game releases ofc can go up from 1.0, historically this was patches to fix last minute bugs, but now it can include bonus content etc.

Every time I update the game I basically have to replay the entire game. The questlog, the inventory and so on, the buttons on the right don't work no more and give me the grey error screen in my old savefiles.
