Hopefully you will start to get a feel for what does, and does not work, as you work on the game. The pinfall at the end seems somewhat out of place, maybe something more that leads up to that point like a finishing move that then leads into the pinfall? Maybe I am thinking this will be more wrestling than anything else, but it feels more like a fighting game right now. It is hard to suggest where I feel the game should go. A fighting game plays differently to a wrestling game, at least in my opinion.- The cumulative damage at the moment is only used to determine how weak you are before a submission and as for the final animations I'm still wondering which method is more feasible for me.
Thinking about it a bit as I type this out, maybe the finishing move concept works within the frame of the game I believe you are trying to create. After a finishing move, the character has 10 seconds to recover or they lose (the round or fight?). The idea is basically what a knockdown in boxing might be at a basic concept level.
