I don't know about that Tifa mocap test. Looks a little too... I don't know if "realistic" is the word I'm looking for, I just know I've seen less uncanny valley looking versions of Tifa. I'm sure whoever BulgingSenpai got to do the mocap is a decent person. It's just going to take a lot of getting used to for me. Not to drag other artists into this, but Redmoa's Tifa is a lot more pleasing on the eyes. Sure, it may not be as realistic as this, but Tifa's a video game character. I don't think she's supposed to look realistic. That's my twenty five cents. Do with it what you will.

it is because of high bitrate in the video. higher bitrate gives better quality but the quality will peak at some point. after that point, increasing the bitrate further will increase the file size only. and yes, many artists put a higher bitrate than they need to.
Generally, yes. HOWEVER, if space is your first concern, 720p will do the trick for the most part unless you have a phone that supports up to 4k and you want higher video quality. Most videos publish with 1080p being the lowest quality anyways but I'd say you do not need to worry about higher video quality and get 720p or 1080p to save space.
