I really use the hell out of that checkpoint system (that's how I've gone around noticing details, etc) and I have one big playthrough I've done it on. So far everything works pretty well, but I know somewhere down the line things are going to break real bad.
You don't even need to use the checkpoint mod there, if you wanna do all three eventually. Just pick the, you wanna start a family and be her consort option there. Then just do the "find a party" option sometime Saturday or Sunday in the evening and get engaged to Rachel there. Granted, you'll have to use a green light to do it then but the less you use the mod is probably better, in the long run. Plus, you'll learn a little bit about how marriages work for demons.
